Method Preheat the oven to 180C/160C Fan/Gas 4. Heat the oil in a large, shallow, ovenproof pan or casserole. Add the chicken pieces and fry over a high heat for 5 minutes until browning.
Add the chicken, toss to coat and let stand at room temperature for 15 minutes. Add the tomatoes, wine, potatoes and 3/4 cup of water to the casserole. Cover and bring to a boil over high heat.
